Canned Blueberry Pie Filling

Blueberry Pie Filling

Blueberries are in season this time of year. They can be expensive at the store, but at Costco, they are a great deal! I recently bought some at Costco and got to work on my blueberry pie filling. Frozen blueberries also can be used.

The great thing about blueberries is you can sort them by just running your hand through the bowl of blueberries. The yucky ones stick right to your hand. After sorting the blueberries, washing and sanitizing your jars and lids, you can make the pie filling.

Blanch the blueberries in a by putting them in a pot of water, bringing water to a boil, and boil for one minute. Drain the blueberries and cover the pot to keep the blueberries hot. {Blanching is heating them at high temperatures for a brief time to stop the enzymes that can cause the flavor to degrade during storage.}

Make the liquid filling by mixing one packet of Clear Jel, or Ultra Gel, with the 3/4 cup of sugar in a large pot. Add the 1 cup of blueberry juice {or water} and heat on the stove until the mixture thickens and begins to bubble. Add the 3 and 1/2 teaspoons of lemon juice, stirring constantly.

Combine the liquid with the berries, stirring gently. Fill the prepared jars with the blueberry mixture. Fill the jars within 1 inch of the top and wipe the top of the jars clean.

Help the pie filling to settle to reduce the amount of air space in the jars {you can gently stir with a knife}. Seal the jars with the lids and rings.Process the filled jars in a water bath.

Keep them covered by at least one inch of water and boiling for about 30 minutes. {Time increases the higher altitude you are}. Then you have yummy blueberry pie filling all ready for a summer party!
